Lemon Risotto with Calamari

Ingredients
Number of Servings: 2
- 1 cup Risotto rice.
- 4 cups Chicken broth.
- 1/4 cup Non-alcoholic white wine.
- 2 tbs Butter.
- 1 tbs Olive oil.
- 1 Lemon.
- 1 Lemon zest.
- 2 tbs Parmesan cheese.
- 1/2 Chopped onion.
- 1/2 kg Calamari, rings.
- Parsley.
- 4 Sprigs fresh thyme.
Instructions
- Sauté the calamari with the 1/2 tbs butter for one minute on each side. Then remove to a plate.
- Use the same pan to cook the onion with the olive oil till it’s softened and then add the risotto to the onion.
- Add the white wine to the mixture and cook it until the liquid evaporates.
- Add the chicken broth gradually and stir every time till you reach the desired texture.
- Add the lemon, salt and pepper, calamari, thyme, butter and sprinkle chopped parsley.
- Stir and serve.
