Lemon Redcurrant Cake


Number of Servings: 6
  • 1 1/2 cup Flour.
  • 3/4 cup Sugar.
  • 2 ts Baking powder.
  • 3 Eggs.
  • 1 ts Vanilla extract.
  • 1/2 cup Plain yogurt.
  • 1/2 cup Vegetable oil.
  • 1/2 Lemon, juice and zest.
  • 1/4 cup Redcurrant.
  • 1 ts Poppy seeds.
  • 1 tbs shredded almonds (optional).


  1. In a larger mixing bowl, add the egg, sugar, and oil and whisk until well combined.
  2. Add the remaining ingredients except for the currants and almonds.
  3. Pour the mixture over greased pan and throw the currants and sprinkle the almonds.
  4. Bake in a preheated oven at 170c for 30-35 mins.
  5. Let it cool and sprinkle some powdered sugar.
