Avo-Mango Chicken Bowl

Ingredients

Number of Servings: 2
  • 2 Chicken breasts.
  • 1 tsp Cajun spices.
  • 1 tbsp Olive oil.
  • Sea salt.

For the Salsa:

  • 1 Avocado, cubed.
  • 1 Tomato, cubed.
  • 1/2 Mango, cubed.
  • 1/4 Small onion, finely chopped.
  • 1 tbsp Chopped cilantro.
  • Sprinkle of beetroot sprouts (optional).
  • 1/2 Lemon juice.
  • 1 Clove of garlic.
  • 1 tsp Olive oil.
  • Sea salt.

Instructions

  1. Pre heat the oven to 200 degrees.
  2. Season the chicken with salt, olive oil and Cajun spices from both sides.
  3. Heat a pan over high heat until smoking hot.
  4. Add the chicken and cook evenly on each side for 2 mins.
  5. Place the oven proof pan in the oven and cook the chicken for 17-20 mins (temperature 165 F).
  6. Mix all the salsa ingredients together gently in a bowl.
  7. Pour the salsa over the chicken and serve with quinoa or wild rice.
