Almond Brittle

  • 3/4 cup Sugar.
  • 1/2 cup Corn syrup.
  • 1/3 cup Honey.
  • 2 tbs Water.
  • 1 ts Rose water.
  • 1 ts Baking soda.
  • 1 tbs Butter.
  • 1/4 cup Shredded almonds.
  • Sea salt.
  • Shredded pistachios.
  • Dried roses.


  1. Mix the sugar, corn syrup, honey, and water in a deep sauce pan over medium-high heat and keep stirring until it turns amber color (or reaches 147F).
  2. Remove off heat and quickly add the rose water, butter, baking soda, and almond and continue stirring for a minute.
  3. Pour the mixture into a baking tray after spraying it with cooking spray.
  4. Quickly sprinkle the pistachios, dried roses, and salt.
  5. Let it cool completely before breaking.
